My mom made this bread all the time while I was growing up. She used to make a ton every Christmas to deliver to friends and family. This bread is so good and especially good for me because it brings back so many great memories and feelings.
Add to mixer:
3/4-1 Cup oil (I usually use olive oil...the other day I used coconut oil and it was even better)
2/3-3/4 cups honey (tip:measure out the oil first and then use same measuring cup for honey)
1/2 cups oats (old fashioned) to 1 cup of water (cook this before adding or use leftover oatmeal)
2 Tbsp. salt
4 1/2 cups water (the water temperature depends on the temp of the oatmeal. If it is hot then use cool water if it is cold use hot water)
2 Tbsp. yeast
work the mixer to get the yeast wet
wait and watch to make sure the yeast is working
add approximately 12 cups of flour ( I have used all wheat flour, a combination of wheat and bread and mostly bread flour. Do whatever you prefer)
Add the flour until the sides of the mixer are cleaned off
Let knead for 5-10 minutes after it cleans the sides.
Shape dough in loaves and put them in greased pans. Let rise then back at 350 for about 25 minutes. Temperature should be 185 degrees.
You can also roll out the dough and top with butter, sugar and cinnamon and raisins. Roll together, let rise and bake.
